In the end, “says Mike, “great pizza, like anything else, is all about balance. It’s that simple.” Mike also likes to use a musical metaphor: “What I do is like a producer picking up individual tracks of some unbelievable music … It could be Miles or Mozart. All I do is take it back to the studio and remix it … I have invented nothing … I am just trying to do one small thing right. I’m on a mission, I have a responsibility, to do something with integrity and dignity.” Oh, and one more bit of wisdom by way of Mike Bianco: “If the pizza guy is teaching you something,” he says, “imagine what the smart people can do.”
